Texas Barbeque Recipe
Okay, to get started we have one large diced onion and then I’m sautéing it in two tablespoon of canola oil. To that, I’m gonna add mix garlic and I have one whole jalapeno, cut up, be sure to remove the seeds, coz that’s what makes it extra hot, so we wanted to take that out. So, we’re gonna sauté this for about 5 minutes and then we’ll gonna add in our meat. For our Texmex barbecue, I’m getting our meat ready while I’m sautéing the onion and jalapeno. What I have here is two packages of beef stew meat, it’s cut up in a small cubes, so that two packs of that. That’s not quite two pounds, then I have a little less than a pound of a pork tenderloin, so I’m also gonna cut this up into two inch pieces. So you just wanna sliced it and then maybe cut it in half. So we’re just gonna prepare this meat, coz soon as the onions are done, we’re gonna throw in our meat. Okay, our onions are about ready to go here, I will push them all to the side so I can get some surface to put in the meat. I’ll gonna put in the pork tenderloin, we’re gonna brown the meat for about 10 minutes, we’ll make sure everybody’s good and brown, we’re gonna put them all in here at one time. About 10 minutes later, I’m gonna season it, and I’ll show you the seasoning in just a second. Okay, our meat good and brown, I’m getting ready to season the meat, then we’re gonna a couple of ingredients, and let it cook for an hour. So, we got this all browned, it’s made a lot of juice here already. So what I have here is I have one tablespoon of chili powder, then I have one teaspoon each of cumin, ground cumin, and then one teaspoon of Italian seasoning. The recipe called for just oregano, but since I have Italian seasoning, I’m just doing the whole thing, and then I have one big, big, bay leaf here, so we’ll gonna throw all this in. Mix it around really good, make sure everybody gets good and seasoned. Ooh, I can smell it. You can smell that chili powder, that’s what gonna make the barbeque. Alright. Then we have one cup of beef stock. I keep beef stock in the freezer, we gotta go take a order for sea aloe, be right back. Now we’re gonna throw in our one can of Ro-Tel tomatoes. Mix that really good. We’re gonna cover this, I’m gonna put it on number three, and we’re gonna let this cook, just stir it occasionally. We’re gonna cook this for one hour. Times up, and it’s been one hour, we cook it for one hour at covered, now, we’re just gonna stir it up and see what’s going on in here, now we’re gonna cook it for one hour uncovered, on the same temperature. Just keep stirring every now and then. Okay, our meat’s ready, I’m just pulling it out, and put it on the platter. We’ll gonna let this cool, so we could kinda mash up the meat, we want to make it look like pulled pork, or pulled beef. Really we got both here. Then just continue to let that sauce cook down, it’s gonna be a good sauce. Then in a minute I’m gonna prepare some flour tortillas, you can also serve this on buns, we’ll show you, we’ll gonna put it all together. Okay, we got our tortillas toasted and ready, just follow the package’s directions, just gonna put a scoop of meat in here, then I’ve got some jalapeno deck cheese all grated, and Mike’s I’ve got to put some salsa on here, so we put us some hot cheese. You put all the fixing you want, this is our Texmex, barbecued beef and pork, we’ll gonna eat it like fajita, uhm mm. I’m ready go eat, Mike. You ready go eat? Alright, let’s go.
