Green Curry Chicken
So dek ha! My name is Aunchalee. Welcome to Thai Foodcast. Today we are going to make Green Curry with Chicken. In Thai it is called Gaeng Kheiw Waan Gai. Green Curry is another common dish in Thailand. I remember when I was kid my mom asked me to make the curry paste and she told me if I can powdered the chili a curry paste find enough. I am not ready to get married. Well, guess what? Now, it is just by the curry paste. We should go back and talk about how to cook the Green Curry.

Ingredients
These are the ingredients that you need to make Green Curry Chicken. 1/3 cup of Green Curry Paste. Green Curry Paste is a combination of green chilies, lemon grass, garlic and other spices. You will need to Asian food store to get this. The brand that I use called Mae Ploy but they add the red too. One can of coconut milk, two chicken breasts, half of red bell pepper, half of green bell pepper, one carrot, half of onion, half cup of eggplant, half cup of bamboo shoots. Bamboo shoots, they are baby bamboos that taste a little sour but they are very tender. Two cups of water, one tablespoon of sugar, one teaspoon of salt, half cup of fresh basil.
Preparation
First, start your rice.

Dice the onion.

Chop the carrot into small pieces.

Chop the peppers.
[Demo]
Chop eggplant into quarter inch slices. We usually use a lot of different eggplants in Thailand. It is actually look like an egg. The one that you buy in America are big and purple but you can use that too. Cut chicken into quarter inch slices.

Cut bamboo shoots into one inch strips.

Now, it is time to cook. All you do is put everything together in the pot. First, we can add half can of coconut milk into the pot and turn on the stove to the medium heat. When the coconut milk is start to boil add the Green Curry Paste.

And stir together for about two minutes.

Add two cups of water.
[Demo]
And turn the burner to the high heat.
[Demo]
When it boils add the chicken and let it simmer until the chicken is cook.

When the chicken is cooked add all the vegetables accept the basil.
[Demo]
And bring to a boil.
[Demo]
When everything is cook add the rest of the coconut milk.
[Demo]
Add sugar.
[Demo]
And salt.
[Demo]
And stir together for about two minutes.

Finally, add the fresh basil and then you are done.
