For a New Year’s Eve special we’re going to make an absolutely fabulous cocktail, and that is the name of the cocktail, and Almond Stuffed Dates with Orange Zest and Fleur de Sel. For the absolutely fabulous cocktail you’ll need: one ounce of vodka, three ounces of sparkling wine or champagne, and one ounce of pomegranate juice.
We’re going to add one ounce of vodka, about three ounces of sparkling wine or champagne. My favorite is the Brut Prestige from Mumm Winery in Napa, California. This is my favorite part of the whole drink process. I love that sound, three ounces, there you go, nice and generous of the bubbly, and about one ounce of pomegranate juice. This is full of color, and that is beautiful cocktail, party in your mouth.
There are actually a couple of sustainable vodkas on the market right now. True vodka is organic and with every bottle purchase the company plants a tree in the Central American rain forest which store an oxygen to the air, and Death’s Door Spirits makes a vodka that’s both herbicide and pesticide free, and the ingredients are grown locally in the Great Lake Regions of the United States, but it sounds party without nibbles.
Next I'm going to show you how to make Almond Stuffed Dates that are salty, sweet and super sexy to eat. You’ll need one orange, 24 dates, 24 almonds and a tablespoon of Fleur de Sel.
Take your orange and we just want to get a little bit of the zest, we’re going to mix it with the Fleur de Sel. Fleur de Sel literally means “flower of salt” and you want to use it as a garnish. It’s garnishing kind of salt. It’s a really special salt and what makes it special is that the local artisans actually collected on the top of the surface of the water before it sinks down into the regular pans for collecting salt. You’ve got citrus. You’ve got really sweet of the dates almost like syrup kind of sweet when you’ve got this beautiful rich soft date and they go really nice with our cocktail.
So just want to make a little slit at the top of the date. Take the peel out and replace it with the almond, garnish. There you have the Almond Stuffed Dates with orange zest and Fleur de Sel, and an absolutely fabulous cocktail.
Happy New Year to you and the Green Girl! I'm Pace, the Green Girls food guru and you’re watching the Green Girls TV.
