The Vacation Cocktail Recipe
The Vacation Cocktail, this is a summer time refresher created by friend of mine, Zane Harris from Vessel here in Seattle. Welcome to the Cocktail Spirit from Small Screen Network, I’m your host, Robert Hess.
Now we’ve gone to the Cachaca based drink here, we’re using Boca Loca Cachaca. If you’re not familiar with Cachaca, I suppose you could think of it kind of like just white rum. But that’s still not quite right, rum is made from molasses and Cachaca is made from sugarcane. They take the sugarcane juice. You ferment it and turn that into Cachaca. So it’s not quite the same thing as rum but they kind of have the same parentage, does that make sense? No.
So let’s get on with this drink, it’s called the Vacation. We’re going to start with an ounce and a half of Cachaca. Then we’re going to add 3/4 an ounce of fresh lemon juice. Then we’re going to add 3/4 an ounce of Aperol.
Now this is a product that is similar to Campari that’s got that same sort of complex bitter flavor going on but it’s a lot softer. So if you find Campari to be a little bit too robust for you, Aperol have a good introduction to it, so it’s going to add that sort of flavor to it. We then add a half ounce of simple syrup. We’re using rich simple syrup here which is two parts sugar and one part water. Since anytime I use simple syrup in recipe, people always put in the comment, okay how do you make your simple syrup?
That’s two part sugar, 1 part water, simmer to dissolve a lot of cool bottle, put a little bit of vodka as a preservative and you’re done. Now we’re use an ingredient of one whole egg white. So you take an egg, separate the yolks from the whites and just add that in.
The egg white is going to add a frothier character to it as well as add a bit of body and stuff. Now, when Zane was explaining why he was using egg white in this drink, specifically as a summer based cocktail he said, he discovered that during the summer, he sells far more egg based drinks than he does during the spring. And so, people just tend to like having that extra richness and kind of calming down of the flavors that the egg white does during the summer.
One last ingredient before I forget, peach bitters. Now we add that to rise and since this has egg white, you want to shake a little bit longer. Sometimes people will take the spring off their Hawthorne strainer and even before they put the ice in, shake it with after a while, then put ice in and then shake it again. Now we’re going to strain this into a Champagne Flute. And there we have the Vacation Cocktail drink. I want to have a mine of that next summer vacation.
