Chef John: Hello! This is Chef John from foodwishes.com and this is my new favorite recipe Chicken parmesan John Bake, it is not fried, it is baked, you are not going to believe it is so easy and incredibly delicious and I don't know if I invented it but I am taking credit. In a casserole dish or standard nine by 13 or 12 or whatever you got, put in a couple tablespoons of olive oil and cloves of crushed garlic, mix those around till the bottom coated, then I am going to spice it up with a couple shakes of red pepper flakes, it is optional, but do it anyway. Then I am going to put chicken breast on top of it.
Now I have huge breasts, stop giggling, I was using very large breasts okay? So, I only can fit like five in here. I probably could squeeze six in. It depends on the size of the breast. If we are using real small breast you can probably get seven or eight in there. These are like eight ounce breasts so I only used five, when I put two cups of tomato sauce on there, no I did not measure, why would I want to wash a measuring cup, the jar has three cups in it, I use two, two-thirds of it, that is two cups. See kids that is where you are going to stay in school for stuff like that.
On top I am going to put some nice fresh herb. I have about of quarter cup of chopped basil leaves, alright. So just sprinkle that over, it is going to give it a nice fresh taste, if you want to just dry, go ahead, but the first is better in my opinion. I am going to throw on top of that four ounces of graded mozzarella and two ounces of graded parmesan, that is half of our cheese. Then the secret ingredient a five ounce package of garlic croutons, get in nice brand, something nice and crunchy.
The secret to this dish and why there is no frying involved, why it is so easy is that is going make this incredibly crunchy on the top, chewy on the bottom crust and I will explain more about that later. So that goes on top of your cheese, then the other half of the cheese goes on, that is four more ounces of mozzarella and two more ounces of graded parmesan. By the way parmesan is in chicken parmesan, lot of restaurants, they don't know this, it is chicken mozzarella. It is named the parmesan, feel free to sprinkle in some parmesan, so anyway at home we are going to use the real stuff.
Once that is all set we are going to bake that at 350 degrees for 35 minutes and here is the genius of this dish and yes I believe I just called myself a genius. The top of the crouton with that cheese on top, it is beautifully brown and crispy and crunchy, in the underneath, the underside the bottom half of the crouton soaks up the tomato sauce and the chicken juice and the basil and garlic and pepper flavor and it is just an unbelievable combination. It is just like chicken parmesan or better probably. There are no again frying pans, all the grease splattering. Great for party, great for birthday, anyway make this, you are going to love it and don't forget to check the site for ingredients. Enjoy!
