Thanks for checking out another episode of FixMyRecipe.com. I’m Chef Billy Parisi. New fix goes to Melissa of, well she also forgot to tell us where she’s from. That’s ok. Let us know next time. She submitted a recipe for Bruschetta, not quite sure what bread to use and also wants to kick up her recipe. Don’t worry. We’re going to fix you right up.
You asked if we can use a different type of bread. Absolutely we can. Skip the facacia. Let’s use ciabatta and the good old-fashioned classic Italian loaf. Alright now that they are nice and sliced, we’re going to lay it on a sheet pan lined with parchment paper.
Next, mix together a little bit of olive oil and fresh chopped garlic. We’re going to brush this bread and then season with salt and pepper. Then we’re going in the oven on 300 degrees for about 15 to 20 minutes. It’s going to be perfect golden brown.
Alright while our bread is toasting, we are going to make the stuff to go on top. I don’t mind your recipe so I’m going to stick to that. But I’m going to show you another really cool one. We’re going to make both.
In your Bruschetta recipe, you’ve got tomatoes, little bit of garlic. I’m going to add a little balsamic vinegar because I feel a little froggy. Finish with olive oil, salt and pepper, and of course fresh basil.
Alright Melissa, and for the other Bruschetta ingredients, we’re going to use roasted red and yellow peppers, nice finely julienne. Add in some fresh garlic, shallots, little extra virgin olive oil and we’re going to finish with fresh basil, and salt and pepper.
Oh yeah, looks delicious. Now let’s plate these up, add in our ingredients and then we’re going to show you a little trick, add your little flavor right on top. And for the tomato bruschetta of the extra little kick, add a little Gorgonzola cheese right to the top. And for the roasted red pepper bruschetta, add some goat cheese.
Melissa, so tasty, try using that Gorgonzola cheese and even change up your recipe. Try using that roasted red pepper. It’s different but definitely excellent flavors.
