Tortellini with Caramelized Onions and Bacon
Now, this is where that all happens and all the magic but the most important magic needs to happen in your home so I am here to help. This is my round two recipe for my money saving meals. And I always use the extras from the day before to make it. So, this is what I saved over from my Tuscan soup with Tortellini, an amazing new recipe. It’s going to save you a ton of money and this recipe is called my Tortellini with Caramelized Onions and Bacon. It’s an incredible round two recipe.
I’ve got four strips of bacon chopped in a bite size pieces cooking in a large skillet over medium, low heat. Now once they are crispy, I’m going to remove them and place them onto a towel to absorb the extra bacon fat. Add one thinly sliced of medium yellow onion. You just want to fry it in the bacon fat until it turns nice and light golden brown. It should take about ten minutes. I got to tell you, you know the sweetness of those caramelized onions and the salt from the bacon that is some flavor combination.
Next, this is two cup of my extra tortellini from yesterday that I cooked in some salted boiling water, toss in the reserve bacon. If you don’t have any extra tortellini left over, any kind of cooked pasta or ravioli is perfect and a quarter cup of fresh parsley. Season with some salt and pepper and you are ready to serve. And save even more by buying frozen tortellini, it’s half the price of fresh and it taste just as delicious. Finish it off with a little grated parmesan cheese. Can you believe it a dollar of 32 of new ingredients cost, that’s it! That’s why I call my money saving meal round two recipe onion. You know what?
