Hi my name is Nina and we’re at Obi Sushi at Reston Town center today with Mr. Tenzon. And he is going to be showing you how to make a tuna roll, also known as the Tekka Maki.
Now I’m going to make a tuna roll. Its Japanese call it like, Tekka Maki and okay this are small see. So usually when you make the sushi tegoro, what I do is like, these are rice, there’s a line here so you have to put rice below this line. Number one, now I’ll show you. The amount of rice is like a pretty much like that and I show you really simple. So this rice is, we already prepare from just a few minutes ago. We already prepared it like this one is mixed with vinegar, salt, sugar and there’s amount order you’re making the amount of rice then you just follow there and just like that. So this is the, I’m going to make the roll and tuna roll like this. I give here a space a little bit so I can make like this one and like that. So you see.
The mat is bamboo shoot, bamboo. This has a bamboo mat so now here. Little bit of rice inside the seaweed and rice has to out it below, there is a line. Actually, as I show you, right at this line. Below this line, you have more rice. Like that and then wasabi, a little bit. Don put too much then you will have a problem. Like that, its really hot, the wasabi. And over here is a, this is the tuna roll, tuna sushi. So usually I cut this way, oh my knife is very sharp, it’s stuck in the cutting board.
Open like that, now I see here and there. I didn’t use this part because of this pot has a lot of muscle or something. It does, when you eat this just with this, your going to stock it to the hard one in here when you eat really hot but this one is soft one. So put this one a little bit and then add some here. So that’s how they’d like that. See that, now lastly, when you roll it, a little bit like this forefinger you pull them in then you push it and roll it. Do that like that. So its going to become like that, see. So I space the rice. I didn’t put the rice right there. That one, I’m going to lock it. After you lock it and come out, see. So this one comes like that. This is a tuna roll. The rice comes perfect when I push the rice, that comes out it covers the space perfect. Then, this one, after this one in a half, yeah. Now this is the half rice of it.
And this one, because if I don’t prepare it, the rice will stick in here, so that’s why I just, little bit and put a rice and the water in here. So when you wet, its easy to cut. Like this, that’s called tuna roll.
