Dani Spies: Hey guys, I am going to show you how to take that left over pasta you have hanging on your refrigerator and turn it into a quick and simple lunch, you can bring to work the next day. Now I call this one Kristi's favorite tuna pasta salad because Kristi is my sister and this was always her favorite. And all we need to do is combine these few ingredients. I am going to start with one cup of chopped red onion, three stalk of celery chopped as well, two cans of tuna packed in water that I drained out.
Next step my pasta. One cup of frozen peas, that we defrosted, two tablespoons of plain light mayo, a half a cup of plain fat-free yogurt. Now my sister wouldn't be caught dead adding yogurt to the salad, she will go for all mayo, but for me, I find the yogurt has the same creamy consistency you get from the mayo and I can enjoy the salad practically guilt free. One tablespoon of red wine vinegar right on top there, a good pinch of salt, few turns of the pepper mill, then we'll bring it all together. This salad is like a tuna sandwich in a bowl, you have got your tuna, the pasta is like a bread, we have our peas and our onions, delicious.
I will give it a taste and see if it is ready to go. The yogurt, it lacks that tang that you get from the mayo but the red wine vinegar bring that right back to this salad. I will pack it up so I can put it in a fridge and have it ready for lunch tomorrow. So the next time you have extra pasta hanging around your fridge try Kristi favorite pasta tuna salad.
