Audra: Most of who thinks giving leftovers there’s no one better to turn to than Better Home and Lifestyle expert Sissy Biggers and of course Chef Ryan Scot all for all a little creative cooking.
Sissy: Ryan it was so much fun to have a top Chef contender here at Better TV.
Ryan: Thank you very much.
Sissy: Congratulations on all of your success and part of the reason you were so successful in the series is inspired ideas for everyday meals and in this case, extending our holiday meal on our leftovers into other completely other places.
Ryan: You hit it right on the nose, I go, I can do breakfast, lunch and dinner here. I want to jump right into breakfast about how to use our leftovers.
Sissy: Okay, I don’t know, it looks like an ex-Benedict.
Ryan: You got it.
Sissy: But something here is a real off for me. Underneath it, is that a stuffing?
Ryan: It is a stuffing cake, this is how I switch about. I can't do a traditional, I got to do in my own way, so I took a leftover stuffing cake. And we made a little hash cake out griddle it. Took some leftover met, we have ham underneath the bottom there.
Put a little spinach, poached egg and you have your version of a Benedicte but with a twist.
Sissy: And with the twist, you got a little mushroom gravy on top to give it that nice flavor to push around on the plate. But this is such a great idea but Ryan I feel like you had this plan up your sleeve. And that you knew you were going to take your leftovers to these other inspired places.
Ryan: You got it exactly. I want to thank a couple of days in advance. When you are shopping for the holidays, you want to grab the extra cheese, the eggs, the bread, the broth. I love cheese 100% natural swan in chicken broth.
Sissy: And it is so important because you were extending, it is a very economical way also to continue to feed that houseful of guests that you have. What I do is I picked the cans of broth a little bit at the time when I'm shopping.
Ryan: Exactly.
Sissy: So it’s not one heavy load, now the main event here for our leftovers. I love this is Turkey Sloppy Joesk. I mean you can't go wrong with those three words. How can help your with this?
Ryan: I already a bunch of stuff of going inside, I got my Sloppy Joe’s spices, I have onions, carrots and ketchup inside there. What I'm going to do add the tomatoes. Sissy can you add the swan and chicken stock.
Sissy: All right.
Ryan: That inside here.
Sissy: Nice sizzle.
Ryan: You hear that sizzle? I love that.
Sissy: You know what, so this is going to make it sloppy, which is what we want.
Ryan: Exactly, and then little kicker on that little soy sauce, it gives that depth inside the dish.
Sissy: So when our Sloppy Joe’s cooked down a little bit but still with that little bit liquid to make it so yummy. You got it—I recognized that nice big sandwich there but how about the little ones? I love that idea.
Ryan: Well the big sandwiches for me and then the kids, or you know,, that has somebody just doesn’t want a big bite. We can do mini ones with the leftover rolls that you have.
Sissy: So essentially it is a Sloppy Joe’s slider?
Ryan: You got it.
Sissy: How much fun is that for the day or two after your holiday? And then another idea which you know doesn’t have to be complicated is a turkey soup as a leftover.
Ryan: So simple a broth, stock done just pour it on the pot a little bit of a butter nut squash, mushrooms and shredded turkey inside it. Finished with cilantro and I will give a little Asian inspired.
Sissy: Why think any Asian treatment of a leftovers always going to make it really exciting and fun to have a couple of days after that.
