Rhiannon Ally: He’s been a star in the food network for 12 years. He has cooked in the kitchen of some of the most critically acclaimed restaurants and he has traveled the globe to feed his own insatiable appetite. The very talented chef Tyler Florence is here showing us how to whip up two delicious summer salads and we are so turned on to have you.
Tyler Florence: Rhiannon, good to see you!
Rhiannon Ally: I’m feeling like the luckiest girl in the world right now. You’re cooking for me today and I have to ask you’ve been in food network for years and years. What has been you favorite show to work on?
Tyler Florence: The Your Food 911 was a really interesting show that shot for about five years. I was in an episode where our show where we travel in the country and can help everyday people out with their own cooking emergencies. I’m working in restaurants for most of my adult life. There’s a lot of technique that we can use and simply go to make simple foods stay delicious and that was really interesting for me for a long time to help everyday people get dinner on table and now what I’m really interested in is “Tyler’s Ultimate” – my new show. It’s on a big day and we’re just nominated for a daytime Emmy which I really saw that—
Rhiannon Ally: Congratulations.
Tyler Florence: Thank you very much!
Rhiannon Ally: Okay so we’re going to cook and talk? Maybe you want to get it started.
Tyler Florence: Yeah. We cook and talk at the same time. So what we’ll do is make some really delicious summertime salads. Right now, if you go to the market place, you get it at farmer’s market like vegetables that we start to pop. So, let’s talk about that. Most Americans aren’t getting enough vegetables. That’s an obvious stat. So, I think it’s really important especially this time of the year. Let’s eat healthy. Let’s think about fresh flavors and fresh ingredients. So, what we’re going to do is simply get some chicken. So I’ve got some wish bone salad dressing which not only makes great salad dressing but also fantastic with marinade. So, I’ve got a little splash here and some bonus pieces of chicken breast.
Rhiannon Ally: You’ve marinated it in that?
Tyler Florence: Absolutely, so you want those in the fridge for probably up to 20 minutes. If you don’t have a lot of time anything will impart some flavor to the chicken breast but you don’t need a whole lodge just not to code it. You don’t want it wet, super wet going on the grill. Just so it has much flavor on top of that.
Rhiannon Ally: With that?
Tyler Florence: Yeah, these guys have already been grilled and what we’re going to do is just cook of salad here. These are romaine’s pears that has been spilt and washed, alright.
Rhiannon Ally: Look how pretty you make the lettuce even look good.
Tyler Florence: Yeah, this is really come on entrée salads. If you like it really big, grilled chicken Caesar you’re going to love this. So, we’re going to put some wish bone, Italian salad dressing right on top of this. And one of the great things about wish bone salad dressing is the oils inside the dressing to help your body better absorb vitamins A and E versus our dressing. So, the oils and fats are not silly bad thing because they act as little vehicle and taking the nutrients straight to you r body where you need it most.
Rhiannon Ally: So don’t skip the dressing.
Tyler Florence: Don’t skip the dressing. You wouldn’t doubt. So we’re going to put that right on top. That’s nice and juicy and then we’re going to take our chicken breast right over slices on the bias alright. So you get some nice beautiful pieces like that and we’re just—
Rhiannon Ally: Yes, it looks amazing.
Tyler Florence: So we’re just going to take our chicken breast two or three and this is a cool thing when you think about salad, you always going to think about them for lunch and then it’s all so big, chopped up mess, but I like to do is take our main ingredient which is chicken for this and then present it whole where it still feels like you’re getting a nice big entrée portions of those nice and substantial to get you—
Rhiannon Ally: Well. It looks amazing. It definitely doesn’t look like a side salad by any means.
Tyler Florence: Yeah, definitely. So a little more dressing on top and we got some roast red pepper, and also some of these gorgeous garlic bread crumbs which are really great. You can get all these recipes at Wishbone.com and that’ll look good.
