Veggie Peeler skills

Chef Dan: The vegetable peeler is also a great tool to have in your kitchen. It's not used only just for peeling vegetables, but also creating some other textures to add flavors and textures into your dishes. One of my favorite tricks to do with this is to simply take a soft vegetable like zucchini or yellow squash and go to full length and peel some nice wide strips like so. Now, we have some great noodles that you could use just in a sauce like this itself. Another possibility is to lay them out on top of each other and slice them long lengthwise, as thick or as thin as you like and then you have some excellent noodles to use in your blended tomato sauce or pasta sauce or Alfredo sauce and get a plate of pasta like so. The other possibility is to take a couple of pieces, maybe lay them side by side overlapping a little bit and using your pâté as a filling. You could throw some other things in there if you want scallions and dried tomatoes, whatever suits your fancy and create a nice roll this way and you can plate that and put a sauce on it and have like cannelloni or other types of noodle wraps.
