What Is Miso

Miso is a traditional Japanese food produced by fermenting rice or barley with salt and soy beans. It is a thick paste that has an almost nutty salty and slightly sweet flavor. Miso is high in protein and rich in both vitamins and minerals. Here are just a few examples of the many varieties available. This one here is the one I use most often as it’s made with brown rice and has a slightly nuttier flavor. This lighter Miso is made with white rice and is a good Miso for beginners as it is the most mellow of the Miso family. As long as Miso is properly stored and refrigerated, it can enjoy a long shelf life. It is also available in most health food in Asian stores and increasingly in mainstream grocery store as well
