What is a Mortar and Pestle?
A Mortar is a bowl often made of wood, marble, pottery or stone. The Pestle is used to
grind or pound ingredients. A mortar and pestle is great for things like grinding spices as
you can control how fine you want to grind them. This type is especially popular in
Thailand for making things such as their famous curry paste.
A few advantages to this one are its weight, size and texture. The weight is important
because you don’t want the mortar to move around as you work. The heavy pestle is also
important as it will actually do some of the work for you. The larger size is nice because
it’s big enough to keep everything inside.
Also, the rougher interior surface helps to grab the ingredients giving you that needed
traction. One of the many advantages of using a mortar and pestle over a food processor
is the fact that you control the consistency allowing you to build and layer the flavors as
you like.
You should avoid using soap to clean your mortar and pestle. Just rinse well and freshen
occasionally with something acidic such as lemon juice. Also, it’s a good idea to place
something at the bottom of the mortar, so it doesn’t scratch your counter or move around.
