A more practical solution is to cut the onion next to the stove or sink. The flame from a gas burner or the running water in the sink pulls the onion's acid into its air stream away from your eyes. Also, use a sharp knife without serrations. It is the cutting open of those molecules that releases the gas. The smoother the cut, the less gas is released.

Hey Doc how come onion's make my eyes water? Dr. Charlotte Grayson: Good question, what happens is this when you chop in to the onion you release enzymes that form a visible base gas in the air, the moisture in your eyes reacts with the gas to create a very mild sulphuric acid, ouch. Your eyes then form tears as a natural difference to try to dilute the acid and flesh it up, now if you are like most people they start rubbing your eyes to relive the stink. Which are probably just making it worse, your hands are likely coated with boils from the onion which shifts your tear ducts into over dry, what to do to prevent this? Try chilling the onion before you cut it, that might not completely work but it should help, you can also try cutting the onion under water, so that could be a little difficult to manage, if nothing else works try some safety goggles. You might look a little silly, but at least you can see for stump the Doc I am Dr. Charlotte Grayson.
