Mindy: Hi, we are joined William Douillet, the sommelier DB Bistro Moderne in the heart of New York City. Hi, William. Thank your for coming.
William: Hello, Mindy. Thank you for having me.
Mindy: Now, sommelier from New York City’s top French Bistro. I knew you would be the perfect person to help me pair some red wines and cheese. So, please walk me through and tell me what you had selected.
William: Okay. Our first cheese here is Olsoerati. It is a firm Spanish goat’s milk cheese and the one that I selected today is a Remaluriyoha from 2001.
Mindy: That looks great. Now, is that a little spicy to compliment the goat cheese.
William: It is, it is a little obasious and little bit spicy. So, it will certainly compliment that richness of the goat cheese.
Mindy: Sounds delicious. I Cannot wait to try that and next I see you have Brie, which is one of my all time favorites. What do you suggest to go with Brie?
William: Certainly, with the Brie, I have a very silky textured Pinot noir from Oregon, it is from the Lemelson Vineyards, 2005.
Mindy: Great. Now, I know this is a specific bottle of wine. What would you recommend if people cannot find that exact bottle of wine, would you recommend any 2005 Pinot noir?
William: I think any 2005 Pinot noir would work very well.
Mindy: And would a Bourdeau go well?
William: A Burgundy would do very nicely.
Mindy: Thank you for the tip. I appreciate that and last, but not the least I smell we have some delicious Brie cheese.
William: Yes, that is a Gorgonzola therefore our last cheese and with that a pair of very spicy Cotes-du-Rhone from Domain Deligenous 2006.
Mindy: Wonderful. Now, I do not about you, but one of my favorite cheese shops in this city is, Artisano. Do you have a favorite cheese shop you would like to go to?
William: I love the very biggest competitor, Murray’s Cheese Shop.
Mindy: I have been to Murray’s too. That is on the West Village, right?
William: Yes, it is.
Mindy: Wonderful. That color looks great. Look how pretty it looks.
