Host: Hi, this is Shawn Hubbell. He is a private chef and a CIA graduate in Goshen, New York, and he has his own website. and he is going to offer us some wine and food pairing ideas.
Shawn Hubbell: Okay. So, today we did a really nice butternut squash soup with an apple sauce on top and we paired that with the dry Riesling, the high acidity and the green apples went, really well with the soup. Other really nice pairings are at last night here at the winery we did a Pan Seared Salmon dish over a white bean puree, and that went really well with the Pinot Noir. The Pinot Noir is really, really good.
Other little pairings that I am thinking about of the top of my head, I really like -- tonight we're going to be doing a -- we're going to do Fresh Pappardelle Pasta with a three herb pasta sauce and we're going to be putting that with a multiple Chardonnay, let's put that, and it's good to go. You can definitely check out my website, it's www.amuzae.com. I do private dinners, I do private dinner parties. I also do cooking classes at your home.
