We are going to make Zesty Italian Salmon.
First a cup of peppers, half of red, half of yellow, all right. Cut the yellow, just cut it up in big long slices. Slice an onion in full strokes, in half size.
The trick to Zesty Italian is the mayonnaise. You take one cup mayonnaise, and grab a fork. First thing you do, is take what it is called Goya Adobo, that is the spice for the fish I found and you just spread it on, nice and even, right across the top.
I got the oven preheated to 375, nice and neat stroke across that and I take the mayonnaise. Grab the mayonnaise and spread it nice and even across top, nice and thick. I use one cup of mayonnaise for a full fillet across the corners and a half or half of fillet. And I have got my aluminum foils sitting here. And I will show you why because we, in Alaska, we make a lot of aluminum foil meals and we cook outside, spread it nice and thick.
Mayonnaise, helps to take out a little bit of the fish taste, but it doesn’t take away from the salmon taste. Spread it nice and even, nice and smooth. See that? All right, I take my onion, put it on first. Spread out all nice and the onion is good work. It takes about half onion for a full fillet. Cut it in halves and spread it nice and evenly.
I take my peppers. Yellow pepper, red peppers, I found that they have the best combination flavor. Just put it all on top, and I make a little bowl. Fold it up, fold it up. And once I have the bowl, I take my Zesty Italian, or whatever kind of Italian dressing you like, shake it up. Remember, we are trying to make meals fast and salmon cooks fast.
I use a fork right across the top to—out and be about half cup of Zesty Italian for one fillet. Then, I take my lemon. Now squeeze half of lemon across the top, nice and even. Okay, see that. Then, I leave a little bit of air gap, hold it up, put my oven preheating at 375. Put it in the oven for 20 minutes, and we’ll be done.
Put salmon out and look at that. The best way to tell a salmon is cooked is to take and see the flakes. Put the little flake behind it, see that. Okay, that is done!
And actually, it kind of depends on your oven but that is what she looks like and she flakes very easily with a fork, and the finish product looks like this. You can eat it with your favorite salad or rice, and that is the Zesty Italian Salmon.
