Nando Cuca: Hi! I am Nando Cuca from Cuca Brazuca and this is Yellow Farofa. There are several types of Farofa which accompany a variety of different Brazilian dishes. Yellow Farofa is specially good for seafood. The main ingredient for farofa is casava flour, which you can buy in Portuguese or Caribbean stores. Start by putting quite a lot of butter in a frying pan. The casava flour is very dry, so it does need a lot of butter to give it some moisture and then add chopped onions and let them soften up a bit on to the fire and mix together with the butter.
Once the onion has softened up, add about a tablespoon of Dende oil, which is palm oil and now you are ready for the last step which is to add the casava flour and about this much will do and stir. Let the butter and the onion and the Dende oil mix with the casava flour and you will see that the whole thing becomes a light yellow and toast to delicious and there you are, a couple of minutes later, your farofa is done. Just add a pinch of salt, give it a couple of shakes to the pan and serve.
