Speaker: Welcome back to Barbecue Talk in a series of barbecue to how to videos. Today is going to be real quick one. This one is simply how to remove the membrane off the back of your pork rib. As a matter it's baby back rib, spare rib. We always remove the membrane whether we are doing it for competition contest or cooking at home. I take the membrane off. I find it's a chewy bite. I really don't want to experience it all. I don't want experience -- the judge experience it in contest.
Most people are already been aware that there is a membrane in the back and that you can remove it. So we are going to do two or three minutes here just show you. These are all baby backs and a great looking pork rib and the back here, you will see a shiny, silvery kind of layer, that white layer is the membrane, that's what we are going to take off today.
Okay so just lay it over on its side. Sometimes, you can dig a thumb under there. Sometimes it takes a spoon or knife, whatever into the spoon doesn't matter, dig along with bones that you are not getting the meat. Give yourself little bit of a start. Next, move it on a paper towel. The fingers may get in way for just a second here. The paper towel is going to hold on to the membrane and it will hold on to that membrane there.
So holding the rib down, give it a little tug and here we are going to be lucky. Sometimes it comes off in one strip, sometimes two or three, but just use a nice even pull. This right there. Like a drum skin that's the membrane that we remove. A lot of people have never thought to remove it, give it a try, take it off one end lead to the other.
Now, your seasonings can penetrate both sides of your rib, okay that's one. We will do a couple here. Show you again how easy it is. Take your rib. We will go on to the side, rub your spoon, I can see a little bit of layer there. I could probably, you can see, there is clean towel here, probably just rub that one, I might not have to, then you will have to use a spoon on that one and I don't know if you can hear or not, I will go a little bit slower, just like taking card -- cardboard up your ribs. That's good. We are going to climb a tree with it. Put that.
Anyway, one more, have another rib. Flip it over. Now, on these ones you can see that we are going to get much more seasoning penetration on those. One more time this one doesn't really have a start, it doesn't matter, where you start, always you can get pieces that you can grab on to. So it slides under. Give it a little lift, wait it to there, grab your paper towel. Peel it. That's it. Removed. Now, you are on your way to some fine barbecue.
That's it folks. Easy as it can be. If you haven't had with the membrane removed before you are really don't what you are missing, give it a try. It's very easy to do. Request your friends, neighbors, family next they come on over for ribs. So we are just going to keep this quick. You can well imagine what our next video is going to be.
